A Thanksgiving from Cheeky Duck Vineyard : The Cheeky Wellington

Chicken liver, burnt pear, and cognac terrine to start, followed by a 12-hour wood-roasted brisket Wellington with a foie gras, pecan and mushroom duxelle, drizzled with amaretto jus. Served with wood-roasted root vegetables, and new season potatoes on the side.  Apple butterscotch crumble pie to finish.
